Drain and briefly place in a colander after rinsing and letting it drain.
Pick or cut cod into pieces.
Cut the onions into pieces, as well as the tomatoes and celery.
Heat the oil and fry the onions and cod in the hot oil, mixing (avoid burning), add the tomatoes and celery, and then mix in the 1/2 tbsp Caribbean and Vegetable Mix No. 1.
Let it simmer on a low heat for +/- 5 minutes.
Eating on a warm pistol or baguette. You can also serve it with warm white rice or boiled potatoes and vegetables of your choice. Also on toast as a snack. For spiciness, add one of the Swiet Moffo pepper sauces. A delight for fish lovers.
