Ingredients
- 1 kilo of cod fillet well and drain
- 150 grams of red onion into thin strips
- 1 ½ tbsp. Vegetable mix no. 1
- 1 tbsp. Surinamese Herb Butter Mix
- Thinly slice 6 dry apricots
- ½ red , green and yellow pepper, deseeded and cut into thin strips
- 1 bunch of cherry tomatoes +/- 170 grams
- 2-3 tbsp lemon juice
- 4-6 tbsp. olive oil
- +/- 10 grams of mint leaves very thinly
- +/- 60 grams of black olives without pits

Instructions
- Spread cod evenly with Vegetable Mix No. 1 and Surinamese Herb Butter Mix.
- Place in an oiled baking dish, spread lemon juice evenly over the fish, garnish with apricots, peppers, cherry tomatoes, mint leaves and black olives.
- This whole in a preheated oven at 200 degrees C +/- 45 minutes, oven setting now at 150 degrees.
- Serve with boiled rice, pasta of your choice or potato.
- Cucumber lettuce Cut 1 cucumber into slices, 1 dash of vinegar, some pepper, salt and sugar to taste.
- Let this soak in for 1 hour.
